Kale Sweet Potato Soup Recipe

Ingredients:

4 skinless chicken thighs

1 tbsp coconut oil

1 large onion, chopped

1 large leek, chopped

4 celery stalks, chopped

3 garlic cloves, chopped

1 tbsp of seasoning salt

1 tsp cumin

½ tsp dried oregano

¼ cup fresh basil, chopped

¼ cup fresh cilantro, chopped

1 jalapeno, deseeded and sliced in half lengthwise

1 large sweet potato, peeled and diced

3 cups kale, chopped

6 cups reduced sodium chicken broth

2 cups of brown rice/barley mix (this is optional, you can even substitute with lentils)

salt and pepper to taste

 

Instructions:

Season chicken with seasoning salt and marinate overnight. If you don’t have time, you can marinate and store in fridge for 2 hours. Marinating it overnight does make a big difference in the taste of the chicken though.

Heat a large non-stick pot over medium heat and heat the oil. Sauteed  the onions until they are translucent. Add the celery stalks, leeks and garlic and cook for 10 minutes. Add the dried spices and cook for another 2 minutes. Add the chicken broth, chicken, jalapeno, basil and cilantro. Cover the pot and cook for 20 minutes. Add the sweet potatoes and cook for another 20 minutes. Remove the chicken and shred and discard the bones. Add the kale and cook for 5 minutes. Return the shredded chicken to pot and remove the jalapeno before serving. Season to taste before serving.
