Carrot Apple Juice Muffins: What to do with Juicer Pulp

Juice pulp just thrown out into the trash or compost seemed like such a waste. I mean, all that fiber just sitting there when it could be helping you increase your daily fiber intake, cholesterol levels and health?
There’s nothing like Home Made. You can control all the ingredients and improve the overall health of any recipe. Reduce sugar, substitute the type of flour, etc.
How about High Fiber muffins?
Sounds like a plan to me. And all I could think of was how many times do I pay for some overly processed, high sugar muffin (claiming to be high fiber) in my local cafe?
And do I really know what’s in those muffins anyway? Nope!
There’s nothing like Home Made. You can control all the ingredients and improve the overall health of any recipe, reducing refined sugars by using unsweetened apple sauce or substituting the type of flour used, etc.
Here’s my recipe for a delicious Carrot Apple Juice and Muffin:
Carrot, Apple and Ginger Juice
6 carrots (peeled and cut tops off)
2 medium-size green apples (cored and deseed)*
2 inch of ginger root (add more if you like)
Juice the first 2 ingredients (remove pulp if making muffin or keep the pressed ginger in the pulp). Add the ginger last.
*I like to keep my apple skin on for added fiber when I cook with the juice pulp.
Carrot & Apple Juice Pulp Muffin Recipe
¼ cup coconut oil
½ cup brown sugar
¾ cup unsweetened applesauce (instead of refined sugars)
1 ¾ cup all-purpose whole wheat flour (also try other flours like chickpea, coconut or almond flours)
2 tsp baking powder
1 tsp cinnamon
½ tsp ground nutmeg
1 tsp ginger powder
½ tsp salt
1 cup pulp from carrot and green apple
- Hemp Protein powder
- Flaxseed meal
- Preheat oven to 400 degrees farenheit.
- In large bowl, whisk together oil and sugar. Beat in egg.
- Once egg is mixed, add in the applesauce. Stir in the juice pulp.
- In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, ginger powder and salt.
- Fold the dry ingredients into the wet ingredients, Grease muffin tray. Spoon batter to top of muffin cups and bake for 20 minutes or until toothpick comes out clean when inserted in a muffin.
